Spiced Honey Chicken Thighs
After years and years of blindly grabbing chicken breasts while grocery shopping, I have started reaching for chicken thighs instead. They’re fun! (As fun as raw chicken can be) They bring a little more flavor than a chicken breast does and they don’t tend to dry our easily. And, they are usually cheaper. I always thought I didn’t like them because I don’t like dark meat. Turns out that’s not true. I like them and apparently I don’t hate dark meat. There something somewhat scary and ominous sounding about dark meat, I think that’s why people think they don’t like it. Its totally worth a shot. And if you are wanting to try out chicken thighs, this would be a recipe to start with. These Spiced Honey Chicken Thighs are a little sweet and a little spicy, a really nice combination.
Ingredients
Spiced Honey Chicken Thighs
- 8 chicken thighs (I used boneless skinless)
- 1/3 cup honey
- 1 Tbsp cider vinegar
- 1 Tbsp chili powder
- 1/2½ Tbsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp cayenne pepper
- 1/4 tsp ground ancho chile pepper
- 1 tsp salt
Directions
- Preheat the oven to 400 degrees. In a small bowl, combine everything except the chicken thighs. Stir until combined.
- Place the chicken thighs baking sheet covered with foil. Brush the honey spice mixture over the surface of the chicken thighs, using about half of the total honey mixture.
- Roast for about 20 minutes. Remove the chicken thighs from the oven and use the remaining honey spice mixture to brush on a second coat. Return the chicken to the oven and roast for another 20 minutes. Serve hot.
